Air Fried Patatas Bravas

A spicy Spanish snack or side dish to your main course

Ingredients (serves 2 as a snack and 3 as a side dish)

  • 500g potatoes – we recommend Rooster, Maris Piper or Elland
  • 2 tablespoons of olive oil
  • 1 finely chopped shallot or small onion
  • 200g passata
  • 1 teaspoon smoked paprika
  • 1 teaspoon balsamic vinegar (or plain vinegar)
  • 1 ramekin of garlic aioli (optional)
  • Salt & pepper to taste

Prep and cooking time: 30 mins

Instructions

  1. Heat the air fryer to 200C
  2. Chop the potatoes into bite size pieces, with or without skins
  3. Soak in a bowl of warm water for 5 minutes to remove starch
  4. Rinse potatoes and dry before tossing with olive oil, salt and pepper in the bowl
  5. Place the potatoes into the air fryer basket and cook for 15-20 mins, turning occasionally until the potatoes are golden brown.
  6. Meanwhile, finely chop the onion and gently fry in a little olive oil until soft
  7. Stir in the paprika, vinegar and passata and simmer until the potatoes are ready. Add salt & pepper to taste
  8. Plate up the potatoes and pour the bravas sauce on top
  9. Serve with a ramekin garlic aioli on the side
