A simple and tasty curry that anyone can rustle up in 20-25 minutes
Ingredients (serves 2)
- 400g baby potatoes
- 200g beef mince
- 1 chilli
- 1 carrot
- 1 stock cube
- 15ml Korma curry paste
- 60ml crème fraiche
- 250g passata
- 1 tsp curry powder
Instructions
- Preheat air fryer to 180°C.
- Chop the potatoes and carrots into bite size chunks
- Halve the chilli lengthways, deseed and then slice thinly
- Pop the potatoes and carrots into a bowl, drizzle with oil and season with curry powder, salt and pepper
- Toss into the air fryer and roast for 15-20 minutes, shaking halfway through
- Meanwhile, place a frying pan over medium heat and fry the mince for 4-5 minutes until brown
- Add korma paste and chilli, then stir for 1 minute
- Add passata and stock cube (in 100mls hot water and bring to the boil)
- Simmer for 10 minutes, seasoning with salt and pepper to taste
- Serve curry in two bowls. Add roasted potatoes and carrots on top, with a dollop of crème fraiche
Tip – swap the mince for 200g of chopped chicken breast for a lower fat option
