Speedy Spicy Roast Potatoes

Ingredients (to serve 4 as a side dish)

  • 6 medium Maris Piper or Elland potatoes
  • 1 tbsp Cajun seasoning
  • 1 tsp salt
  • 4 tsps cooking oil

Garnish Options

  • Freshly chopped parsley
  • A squeeze of lemon juice
  • A sprinkle of garlic powder or smoked paprika

Instructions

  1. Chop each potato in half or thirds (peeling is optional).
  2. Boil or steam them for 5-10 minutes (or microwave for 2 mins).
  3. Preheat Air Fryer to 190°C. Mix the oil and seasoning together.
  4. Drain off all water and coat the potatoes in oil and seasonings.
  5. Air fry for 15 – 20 minutes, tossing occasionally. (Alternatively roast in a hot oven for 35 mins).
  6. Pierce with a fork to ensure cooking is complete, continue to cook if not soft in the centre.
