The healthiest muffins in Ireland! Cottage cheese provides high‑quality protein. Carrots, bananas and rolled oats contribute natural fibre to your diet
Ingredients (makes 8 large or 10 smaller muffins)
- 200g of blended rolled oats, or ready oat flour (for gluten free muffins) or self-raising flour
- 100g cottage cheese
- 1 medium sized grated carrot
- 1 ripe mashed banana
- 40g of your favourite extra ingredient (optional) – chocolate chips, walnuts, raisins, fresh berries
- 1tsp vanilla essence
Prep and cooking time 30-35 minutes
Instructions:
- Preheat your oven to180°C (350°F, gas mark 4) Prepare a muffin tin with paper liners
- Blend the cottage cheese in a bowl until completely smooth
- Add the mashed banana and grated carrots and continue to blend until mixture is creamy
- Stir in flour and other ingredients, ensuring the smooth texture endures
- Spoon the mixture into the muffin cases and bake for 15-20 minutes
- Test centre with a toothpick to ensure muffins are fully cooked
- Allow them to cool in the tin for a few minutes before transferring to a wire rack or plate to cool
Tip- fine grate the carrot and wrap in a paper towel to remove moisture before using
