Protein Carrot Muffins

The healthiest muffins in Ireland! Cottage cheese provides high‑quality protein. Carrots, bananas and rolled oats contribute natural fibre to your diet

Ingredients (makes 8 large or 10 smaller muffins)

  • 200g of blended rolled oats, or ready oat flour (for gluten free muffins) or self-raising flour
  • 100g cottage cheese
  • 1 medium sized grated carrot
  • 1 ripe mashed banana
  • 40g of your favourite extra ingredient (optional) – chocolate chips, walnuts, raisins, fresh berries
  • 1tsp vanilla essence

Prep and cooking time 30-35 minutes

Instructions:

  1. Preheat your oven to180°C (350°F, gas mark 4) Prepare a muffin tin with paper liners
  2. Blend the cottage cheese in a bowl until completely smooth
  3. Add the mashed banana and grated carrots and continue to blend until mixture is creamy
  4. Stir in flour and other ingredients, ensuring the smooth texture endures
  5. Spoon the mixture into the muffin cases and bake for 15-20 minutes
  6. Test centre with a toothpick to ensure muffins are fully cooked
  7. Allow them to cool in the tin for a few minutes before transferring to a wire rack or plate to cool

Tip- fine grate the carrot and wrap in a paper towel to remove moisture before using
