Pulled pork air-fried baked potato

Dinner in a spud!

Ingredients (serves 2)

  • 2 medium baking potatoes
  • 1 tbsp olive oil or sunflower oil
  • ½ teaspoon of salt & pepper
  • 1 small pack of fully cooked pulled pork
  • A handful of grated cheese
  • 1 spring onion or 1 shallot, thinly sliced
  • Unlimited barbecue sauce
  • Optional – Sour cream or crème fraiche to garnish. Add fresh jalapenos for an extra kick

Prep and cooking time 20-30 minutes

Instructions 

  1. Prick the potatoes in a few places and coat them with the oil, salt and pepper.
  2. Pop in the microwave on high heat for 6-7 minutes, until you can push a fork into the centre.
  3. Using a tea towel or kitchen paper to protect your hands, slice open the top of each potato lengthways.
  4. Squeeze the potato slightly, slice through the potato flesh and fluff with a fork so it can absorb the flavours
  5. Squirt a little barbecue sauce into the potatoes and top with pulled pork
  6. Place in the air fryer basket and cook at 200C for 10-12 minutes, turning occasionally.
  7. Lift onto a plate. Add grated cheese, more barbecue sauce and sprinkle with onions.
  8. Allow cheese to melt before serving with a dollop of sour cream or crème fraiche.
