A beloved sweet and savoury Korean side dish
Ingredients (serves as dinner for 2, or a side portion for 3)
- 600g baby potatoes. We recommend The Jazzy variety but others work just as well
- 1 tablespoon of vegetable oil
- ½ a cup of water
- 2 tablespoons of honey (or other syrup)
- 2 teaspoons of sesame seeds
- 2 tablespoons of soy sauce
- 1 tablespoon of ketchup
- 1 tablespoon of brown sugar
- Optional chilli flakes and a crushed garlic clove
Prep and cooking time 13-30 minutes
Instructions
- Cut potatoes into bite size pieces, then either
- spray with a little vegetable oil and cook in an air fryer (high heat) for 15-20 mins
- microwave for 4 minutes
- boil in a saucepan for 10 minutes
- Heat the water, soy sauce, honey, ketchup and brown sugar in a wide pan (also chilli flakes and garlic if included).
- Add the potatoes and boil for about 2 minutes before reducing to a simmer for a further 10 mins
- Add honey and sesame seeds when almost ready to serve.
Tip – adding some pan-fried onions and peppers can round off this dish into a healthy vegetarian meal
