Protein, carbs and veggies in a yummy tray
Ingredients (serves 2)
- 500g baby white potatoes – Jazzy, Venezia, Charlotte are recommended
- 8 sausages or 4 jumbo sausages
- 2 red onions, cut into wedges
- 250g vine-ripened cherry tomatoes
- 60g baby rocket leaves
- Serve with a ramekin of your favourite salsa or spicy sauce
Prep and cooking time 30-35 minutes
Instructions
Preheat oven to 220C (425F, gas mark 7.
- Place the potatoes in a bowl and microwave for 4-5 minutes until soft.
- Use a glove or a clean tea towel to lightly crush the potatoes. Spray with sunflower or olive oil spray.
- Arrange the sausages and onion around the potatoes on the tray and bake for 20 mins, turning the sausages occasionally.
- Arrange the tomatoes over the tray. Bake for a further 5-10 minutes or until the sausages are golden brown and cooked through.
- Drizzle salsa or your favourite spicy sauce evenly over the sausages and vegetables on the tray. Serve sprinkled with rocket
